Cashew Chocolate Fudge Bars

Ingredients

  • ⁠1 cup cashew butter

  • 1/3 cup ghee, melted

  • 1/2 cup maple syrup

  • 1 tsp vanilla extract

  • 3/4 cup coconut flour

  • 1/4 tsp sea salt

  • 400g dark chocolate

Directions

1. Place all ingredients except oil into a high speed blender or food processor and process until well combined⁠

⁠2. Add olive oil and blend until combined and reached the⁠ right consistency - add more olive oil if you want it to thinner.

3. Add cashew butter (reserving 2 tbsp until later), melted ghee, maple syrup and vanilla into a mixing bowl and mix well until smooth. 

4. Add in coconut flour and salt and mix well until combined.

5. Transfer to a lined loaf pan, or small brownie tray. Flatten out to an even layer and transfer to freezer for 30 minutes. 

6. Melt the chocolate in the microwave or double burner method. Add in the reserved 2tbsp cashew butter and mix until smooth. 

7. Add the chocolate layer onto of the fudge in an even layer. Place back into the freezer for 2 hours, or until set.

8. lice into squares, and top with some flakey sea salt. Store in an air tight container in the fridge.
