Smashed Potatoes
Serves: 4

Cook time: 20 minutes
Ingredients
1/4 cup ghee
1 garlic clove, minced
1/4 cup herbs, parsley/basil/dill/chives
1 tsp sea salt
250g baby potatoes
Directions
1. Pre-heat oven to 180C.
2. Boil the potatoes in a large pot of salted water of medium-high heat until just fork tender, about 15 minutes.
3. Melt the ghee and mix with the garlic, herbs and salt.
4. Transfer potatoes to a baking tray, using the bottom of a jar or glass press down on the potatoes to flatten slightly.
5. Spoon over the herby ghee on the potatoes.
6. Bake in the oven for 20 minutes or until golden and crispy around the edges.
