Smashed Potatoes

Serves: 4 

Prep time: 15 minutes

Cook time: 20 minutes

Ingredients 

  • ⁠1/4 cup ghee⁠

  • 1 garlic clove, minced⁠

  • 1/4 cup herbs, parsley/basil/dill/chives⁠

  • 1 tsp sea salt⁠

  • 250g baby potatoes⁠

Directions

1. Pre-heat oven to 180C.⁠

2. Boil the potatoes in a large pot of salted water of medium-high heat until just fork tender, about 15 minutes.⁠

3. Melt the ghee and mix with the garlic, herbs and salt.⁠

4. Transfer potatoes to a baking tray, using the bottom of a jar or glass press down on the potatoes to flatten slightly.⁠

5. Spoon over the herby ghee on the potatoes.⁠

6. Bake in the oven for 20 minutes or until golden and crispy around the edges. ⁠
