Garlic Ghee Fried Fish

Ingredients
3 tbsp ghee
1 garlic clove, minced
1 lemon
1/2 tsp sea salt
1/4 tsp black pepper
1 tbsp fresh parsley, chopped
2 fresh snapper or mackerel fillets (or your choice of fish)
Directions
1. Add 2 tsp ghee to a small bowl, add in minced garlic, 1 tsp lemon zest, juice 1/2 lemon (slice the other half of the lemon into rounds for later), salt and pepper and mix well to combine.
2. Pat dry the fish fillets.
3. Heat a non-stick pan over low-medium heat.
4. Once hot add in 1 tbsp ghee, then add in the fish fillets skin side down.
5. Add in the lemon rounds around the fish, then spoon about 1 tbsp of the garlic butter on top of the fish fillets.
6. Cook for a few minutes, then flip over gently and cook on the other side for the few minutes until it becomes white and flakey.
7. Flip back around so the skin is faced down in the pan. Add in parley and cook for 1 more minute, then take off heat.
8. Serve immediately with some crispy baked potatoes and steamed greens.
