Garlic Ghee Fried Fish

Serves: 2 

Prep time: 5 minutes

Cook time: 15 minutes

Ingredients 

  • 3 tbsp ghee⁠

  • 1 garlic clove, minced⁠

  • 1 lemon⁠

  • 1/2 tsp sea salt⁠

  • 1/4 tsp black pepper⁠

  • 1 tbsp fresh parsley, chopped ⁠

  • 2 fresh snapper or mackerel fillets (or your choice of fish)⁠

Directions

1. Add 2 tsp ghee to a small bowl, add in minced garlic, 1 tsp lemon zest, juice 1/2 lemon (slice the other half of the lemon into rounds for later), salt and pepper and mix well to combine.⁠

2. Pat dry the fish fillets.⁠

3. Heat a non-stick pan over low-medium heat. ⁠

4. Once hot add in 1 tbsp ghee, then add in the fish fillets skin side down. ⁠

5. Add in the lemon rounds around the fish, then spoon about 1 tbsp of the garlic butter on top of the fish fillets.⁠

6. Cook for a few minutes, then flip over gently and cook on the other side for the few minutes until it becomes white and flakey. ⁠

7. Flip back around so the skin is faced down in the pan. Add in parley and cook for 1 more minute, then take off heat.⁠

8. Serve immediately with some crispy baked potatoes and steamed greens. ⁠
