Sweet Potato, Kale + Pomegranate Salad

Cook time: 5 minutes

Ingredients 

  • 1 large or 2 small sweet potato 1/2 tsp smoked paprika⁠

  • 1/2 tsp cumin powder⁠

  • 1 bunch kale⁠

  • 1/3 cup pomegranate seeds 1/2 cup walnuts⁠

  • 1 cup cooked quinoa⁠⁠

Dressing 

  • 2 tbsp ghee⁠

  • 1 tsp dijon mustard⁠

  • 1/2 tbsp honey⁠

  • Juice 1 lemon⁠

  • 1 tbsp apple cider vinegar⁠

Directions

1. Pre heat oven to 180C.⁠

2. Dice the sweet potato into cubes. ⁠

3. Transfer to a bowl and add 1 tbsp ghee, smoked paprika, cumin and pinch of salt and pepper and toss to combine.

4. Transfer to a lined baking tray and bake for 25-30 minutes or until golden.⁠

5. Break off the kale leaves from the stalk and add to a large bowl, add tsp ghee and massage with your hands until softened (this allows the kale to break down which is easier to digest).⁠

6. Add in the cooked quinoa, walnuts, pomegranate seeds and roasted sweet potato.⁠

7. For the dressing, add all ingredients into a bowl or jar and whisk or blend using an immersion blender. Drizzle over the dressing and toss to combine.⁠
