Cherry Tomato + Rocket Frittata

Ingredients
8 eggs
1 tbsp ghee
1/4 red onion, finely chopped
1 cup cherry tomatoes, halved
2 cups rocket, chopped
1 cup dairy-free or regular feta cheese, crumbled
Salt and pepper to taste
Directions
1. In a bowl, whisk the eggs until well combined. Season with salt and pepper, then set aside.
2. Heat the ghee in a large skillet over medium heat. Add the onion and sauté until fragrant and translucent.
3. Add the cherry tomatoes to the skillet and cook for a few minutes until they start to soften.
4. Stir in the rocket and cook until it starts to wilt.
5. Pour the beaten eggs over the vegetables in the skillet, making sure to distribute them evenly. Cook for a few minutes until the edges start to set.
6. Sprinkle the dairy-free feta cheese evenly over the top of the frittata.
7. Cover the skillet and reduce the heat to low. Continue to cook for 10-15 minutes, or until the frittata is fully set and the cheese has melted.
8. Slide the frittata onto a serving plate, cut into wedges, and serve warm with some fresh greens and lemon.
