Cherry Tomato + Rocket Frittata

Serves: 4

Cook time: 6 minutes

Ingredients 

  • ⁠8 eggs⁠

  • 1 tbsp ghee⁠

  • 1/4 red onion, finely chopped⁠

  • 1 cup cherry tomatoes, halved⁠

  • 2 cups rocket, chopped⁠

  • 1 cup dairy-free or regular feta cheese, crumbled⁠

  • Salt and pepper to taste⁠

Directions

1. In a bowl, whisk the eggs until well combined. Season with salt and pepper, then set aside.⁠

2. Heat the ghee in a large skillet over medium heat. Add the onion and sauté until fragrant and translucent.⁠

3. Add the cherry tomatoes to the skillet and cook for a few minutes until they start to soften.⁠

4. Stir in the rocket and cook until it starts to wilt.⁠

5. Pour the beaten eggs over the vegetables in the skillet, making sure to distribute them evenly. Cook for a few minutes until the edges start to set.⁠

6. Sprinkle the dairy-free feta cheese evenly over the top of the frittata.⁠

7. Cover the skillet and reduce the heat to low. Continue to cook for 10-15 minutes, or until the frittata is fully set and the cheese has melted.⁠

8. Slide the frittata onto a serving plate, cut into wedges, and serve warm with some fresh greens and lemon. ⁠ ⁠
