Garlic Ghee Chili Linguini

Serves: 2

Cook time: 10 minutes

Ingredients 

  • ⁠⁠3-4 cloves garlic, finely chopped or minced⁠

  • 4 tbsp ghee⁠

  • 1/2 tsp chilli flakes (optional)⁠

  • 2 tbsp fresh parsley⁠

  • Parmesan⁠

  • Dry Linguine ⁠

Directions

1. Heat the linguine to packet instructions. Reserve 1 cup pasta water.⁠

2. Add the ghee into a hot pan over medium heat.⁠

3. Once ghee has melted, lower heat and add in garlic and chilli flakes.⁠

4. Sauté for a couple of minutes until fragrant and golden, staring around the pan and making sure the garlic doesn’t burn. ⁠

5. Add the hot pasta along with the 1/2 cup pasta water, and toss it using kitchen tongs until the sauce thickens. Keep on tossing and add more pasta water if needed.⁠

6. Remove from heat, and add freshly grated parmesan cheese and chopped parsley leaves. Toss continuously and season with salt if needed. ⁠

Serve warm with extra grated parmesan cheese and enjoy!⁠
