Garlic Ghee Chili Linguini

Ingredients
3-4 cloves garlic, finely chopped or minced
4 tbsp ghee
1/2 tsp chilli flakes (optional)
2 tbsp fresh parsley
Parmesan
Dry Linguine
Directions
1. Heat the linguine to packet instructions. Reserve 1 cup pasta water.
2. Add the ghee into a hot pan over medium heat.
3. Once ghee has melted, lower heat and add in garlic and chilli flakes.
4. Sauté for a couple of minutes until fragrant and golden, staring around the pan and making sure the garlic doesn’t burn.
5. Add the hot pasta along with the 1/2 cup pasta water, and toss it using kitchen tongs until the sauce thickens. Keep on tossing and add more pasta water if needed.
6. Remove from heat, and add freshly grated parmesan cheese and chopped parsley leaves. Toss continuously and season with salt if needed.
Serve warm with extra grated parmesan cheese and enjoy!
