Green Veggie Falafels

Ingredients 

  • ⁠1 400g can chickpeas, drained + rinsed⁠

  • 1/2 cup fresh parsley, chopped⁠

  • 1/2 cup fresh coriander, chopped⁠

  • 3 green onions, chopped⁠

  • 2 cloves garlic, minced⁠

  • 2 tbsp chickpea flour (or all-purpose flour)⁠

  • 1 tsp ground cumin⁠

  • 1 tsp ground coriander⁠

  • 1/2 tsp salt⁠

  • 1/4 tsp black pepper⁠

  • 1/4 tsp baking soda⁠

  • 1 tbsp ghee ⁠

  • 2 tablespoons ghee (for frying)⁠ 

Directions

1. In a food processor, combine the chickpeas, parsley, cilantro, onion, and garlic. Pulse until well combined but still slightly chunky.⁠

2. Transfer the mixture to a mixing bowl. Add the chickpea flour, cumin, coriander, salt, black pepper, baking soda, and 1 tbsp ghee. Stir until everything is evenly mixed.

3. Shape the mixture into small patties, about 1 1/2 inches in diameter.⁠

4. Heat the ghee in a large skillet over medium heat. Add the falafel patties and cook for 3-4 minutes on each side, or until golden brown and crispy.⁠

5. Once cooked, transfer the falafel to a paper towel-lined plate to drain any excess oil.⁠

6. Serve the falafel hot with your favourite dipping sauce, pita bread, and fresh vegetables.⁠

**Keep fresh for 2-3 days sealed and stored in the refrigerator ⁠
