Baked Salmon Tacos

Ingredients
4 salmon fillets (about 4-6 oz each), cut into bite sized chunks
2 tablespoons ghee, melted
1 tbsp honey
1 teaspoon chilli powder
1 teaspoon smoked paprika
1/2 teaspoon onion powder
1 tsp chipotle in adobo paste
1 tsp honey
1/4 tsp sea salt
8 corn tortillas
1 cup shredded cabbage
1 avocado, diced
1/2 mango, diced
1 jalapeno
1/4 cup chopped coriander
1 lime + 1/2 lime
1/2 cup sour cream
Lime wedges for serving
Directions
1. Preheat your oven to 200C.
2. In a small bowl, mix melted ghee with chilli powder, smoked paprika, onion powder, chipotle, honey and salt.
3. Place salmon fillets on a baking sheet. Mix the ghee mixture over the salmon. Place the jalapeño on the baking sheet.
4. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
5. While the salmon is baking, prepare the sour cream by mixing it with the juice and zest of 1/2 lime.
6. Once the salmon is done, let it cool slightly.
7. Transfer jalapeño to a chopping board and dice into small pieces. Add to a bowl along with the diced avocado, mango, coriander, and juice of 1 lime. Add salt to taste.
8. Warm the corn tortillas in a dry skillet or directly over a gas flame.
9. Assemble the tacos by spreading a little sour cream, then cabbage, add the salmon pieces and top with the mango salsa.
10. Serve immediately with lime wedges on the side.
