Banana Pancakes with Stewed Berry Compote

Cook time: 6 minutes

Ingredients 

  • 1/2 cup oat flour (processed oats)

  • 3/4 cup buckwheat flour

  • 1 cup mashed ripe banana

  • 1/2 cup any plant based milk 

  • 2 tbsp maple syrup (or liquid any sweetener)

  • 1 tbsp ghee

  • 1 tsp cinnamon

  • 1 tsp baking powder 

  • 1 tsp baking soda 

  • 1 tsp vanilla bean paste/ essence 

  • 2 tsp Apple cider vinegar // lemon juice

Berry Compote 

  • 1 cup mixed berries

  • 1 tbsp lemon juice

  • 1 tbsp maple syrup/coconut sugar

Directions

1. Add all dry ingredients into a bowl (flour, baking powder, baking soda + cinnamon) and mix together.

2. In a separate bowl add all the wet ingredients together apart from the ACV and mix together.

3. Add in the wet ingredients to the dry ingredients and mix together.

4. Heat 1 tbsp of ghee into a pan.

5. Add the ACV in last and stir through.

6. Spoon your batter in your desired size in the pan, moving them around the pan to ensure one side is cooked before flipping to cook the other side. 

7. Enjoy with some maple syrup // cooked berries // coconut yoghurt // cacao nibs.
