Buttery Soft Chocolate Chip Cookies

Cook time: 25 minutes

Ingredients 

  • 1/3 cup ghee, melted

  • 2 large eggs, room temp

  • 1/2 cup coconut sugar / raw sugar

  • 1 tsp vanila

  • 1 1/2 cup almond flour

  • 1/3 cup tapioca flour

  • 1/2 tsp baking soda

  • 1/2 cup dark chocolate⁠

Directions

1. Pre heat oven to 180C.

2. Add the melted ghee into a bowl, add the eggs, coconut sugar and vanilla and beat with a handheld mixer for about 1 minutes until well combined.

3. Add the dry ingredients in and stir to combine until there are no flour bits remaining.

4. Fold through the chocolate chunks.

5. Place in the fridge for about 30 minutes to make it easier to scoop.

6. Line a baking sheet with parchment paper.

7. Scoop 2Tbsp sized balls onto parchment paper.

8. Bake for 20 minutes or until browning on the edges.

9. Let rest and firm up for 10 minutes and cool before serving.
