Coconut Ghee Toasted Granola

Serves: 6

Cook time: 25 minutes

Ingredients 

  • 1 1/2 cup oats⁠

  • 1 1/2 cup mixed nuts & seeds (mixed walnuts, hazelnuts, sunflower seeds)⁠

  • 1/2 cup shredded coconut⁠

  • 1 tsp cinnamon⁠

  • 1/4 tsp ginger⁠

  • 1/4 cup coconut sugar⁠

  • 1/2 tsp sea salt⁠

  • 1/3 cup ghee & coconut oil⁠

  • 1/2 cup maple syrup⁠

Directions

  1. Pre-heat oven to 180C⁠

  2. ⁠Place all dry ingredients into a bowl and mix well ⁠

  3. ⁠Whisk the wet ingredients together then add to the dry ingredients and mix well⁠

  4. ⁠Line a baking tray with parchment paper. Spread the granola in an even layer on the baking tray⁠

  5. Bake for 20-25 minutes, stirring the granola around the tray half way⁠

  6. Leave to cool to room temp (this is important as this is where the crunchy magic happens)⁠

  7. Enjoy with some fresh fruit and milk or yoghurt⁠
