Coconut Ghee Toasted Granola

Cook time: 25 minutes
Ingredients
1 1/2 cup oats
1 1/2 cup mixed nuts & seeds (mixed walnuts, hazelnuts, sunflower seeds)
1/2 cup shredded coconut
1 tsp cinnamon
1/4 tsp ginger
1/4 cup coconut sugar
1/2 tsp sea salt
1/3 cup ghee & coconut oil
1/2 cup maple syrup
Directions
Pre-heat oven to 180C
Place all dry ingredients into a bowl and mix well
Whisk the wet ingredients together then add to the dry ingredients and mix well
Line a baking tray with parchment paper. Spread the granola in an even layer on the baking tray
Bake for 20-25 minutes, stirring the granola around the tray half way
Leave to cool to room temp (this is important as this is where the crunchy magic happens)
Enjoy with some fresh fruit and milk or yoghurt
