Easy Crispy Veggie Fritters

Ingredients

  • 1 cup grated sweet potato (approx 1 small)

  • 1 cup grated broccoli

  • 1 brown onion, diced small

  • 1 cup shredded kale

  • 1/3 cup fresh coriander, diced

  • 1/4 cup mint, diced

  • 1/2 tsp cumin powder

  • 1/2 tsp garlic powder

  • 1/2 tsp chilli flakes (optional)

  • 1/2 tsp sea salt

  • 2 flax eggs (2 tbsp ground flax powder mixed with 6 tbsp water)

  • 3 tbsp buckwheat flour (any flour will work here)

  • 1 tbsp ghee, for cooking⁠ ⁠

Yogurt Dip

  • 1/2 cup coconut/greek yogurt

  • 1/2 Lebanese cucumber, diced 

  • Juice 1 lemon

  • 1/4 cup mint, chopped

  • 1/4 tsp sea salt

Directions

1. Firstly prepare your flax egg and let it form into a gel whilst you prepare the rest.

2. Add all the ingredients except ghee into a large bowl and mix well to combine. Add in the flax egg and mix well. Form into patties, I like to just grab a small handful of the mixture and then press into patties with hands.

3. Heat ghee in pan over medium heat, once hot add the fritters, I did 3 at a time. Press down with the back of a spatula (this is create a firmer fritter), cook for approximate 4 minutes then flip and cook the same on the other side.

4. Transfer to an oven safe dish and place in a warm oven to keep warm whilst you prepare the rest.

5. For the yoghurt dip, add all ingredients into a bowl and stir to combine. Taste test and adjust lemon/salt as desired.
