Sol Spiced Roasted Pumpkin Soup

Ingredients

  • 1 brown onion, diced

  • 2 garlic cloves, minced

  • 1 inch piece of ginger, minced

  • 2 tbsp @sol turmeric spice blend

  • 1/2 tsp chilli flakes (optional)

  • 1 whole butternut pumpkin, pealed, sliced into cubes (or you can use a JAP pumpkin)

  • 3 cups veggie broth

  • 1 400ml can coconut cream

  • Pinch sea salt and black pepper ⁠

Directions

  1. Heat 1 tbsp oil in a pot over medium heat.

  2. Add in the onion and let this sauté until golden.

  3. Add in garlic, ginger and spiced and let this sauté for a couple of minutes - you may need to add in a little water if it sticks to the pan.

  4. Add in the pumpkin and stock, stir well to combine and let this simmer for 15 minutes or until pumpkin is tender.

  5. Pour in coconut cream and stir to combine.

  6. Blend with an emersion blender or transfer to a blender and blend until smooth.

  7. Add in salt and pepper to taste.

  8. Serve with some coriander, chilli flakes and a drizzle of coconut cream.
